The JamsOnline products are prepared with love after personal and original recipes. You will not find them in supermarkets. Ideas for the recipes often came to me while taking a walk in the woods, chatting at the marketplace with a friend, or savouring a nice dish in a local restaurant ( for example, the idea for the carrots & ginger recipe came to me while preparing a sauce for a monkfish dish while i was training at the "Vieux Logis" in Trémolat ( By the way, I really recommend this Michelin starred restaurant.). The idea for the Pears & Black Pepper Jam came into existence while having a chat with a friend about the prices of spices and fruits ( in French, Pears are "Poires" and Pepper is "Poivre", easy to make mistakes)... The products used are only fresh products, preferably organic, but also products that I grow in my own garden or get from neighbours who don't use chemicals to grow their fruit and vegetables. I also pick wild fruits in the woods or along country roads. I use cane sugar for all products but the 2 white wine jellies ( Gevuztraminer and Monbazillac). Although jams are usually made with the 1:1 proportion (50% fruit & 50% sugar) I try to reduce the quantity of added sugar  and usually work with 30-40% sugar...
