Under Italian skies(tomato & aubergine jam)
Tomates et Aubergines
All jams made with ripe red tomatoes are really a delicacy. This one, with eggplant and garlic will surprise you in a positive way on a slice of bread and butter, or on toast. Also, add it to poultry and rice, and you will never stop smiling, thinking of the experience you've had. One of my clients Suggested this jam for chicken sandwiches. Another has taught me to add this jam to soft, creamy goat cheese ( means quite "young")

Tomato & pepper jam
Tomates poivrons
This jam is a wonderful combination of tastes and flavours , colours and textures. The ripe red tomato is sweet and smooth. The dark red pepper adds another touch of sweetness with a darker tone of red. The green, yellow and orange peppers add some bitterness and crunchiness together with colour. Try this jam with white goat or sheep cheese, with poultry and even fish

Tomato & basil jam

This jam goes better with cooked food than on bread or toast( unless you add white /cream cheese or sausage) try the italian sausages or any italian dish for that matter ...Seafood and pasta will go along with tomato and basil jam, maybe even pizza?

For those among us who love spicy food. This jam is not too hot, the hot spice comes more like an after taste, like a good surprise ... As for the rest, what's good for the Tomatoes & Basil jam, will be good for this one too.

The Pastaga (Fennel & Pastis jam)

The fennel & the Pastis give support to one another, but The strong taste of Pastis is softened and becomes really subtle and delicate... Great with goat/sheep cheese, and on a good whole wheat bread as well. Fennel can be very fibrous, especially the one sold in supermarket( fully grown and full of water). The fennel I've chosen for my jam is grown locally in an organic farm and as I can only buy it in the spring, when it is very young you will have to wait for a few month before you can taste this delicacy....

6 Carrot & ginger jam Confit de carottes au gingembre This jam can be nice on a slice of bread with salted butter, but I'd not stop there. I'd try it with duck, fish, or, as suggested by a client in Belvès, with fois gras. In fact, The idea cam to me as I was preparing the ingredients for a sauce to be served with monkfish. It is not only good in taste, but also nice to look at with the orange of diced carrots, the yellowish ginger, so it adds two elements to your plates...

In memory of Josephine Baker (Black tomatoes with sage Jam)

Josephine Baker, a great woman ahead of her time. She owned a castle not far away from my house and in the 1960's , when she had to do a lot of renovation, the locals had taken advantage of her and almost ruined her... This was a good reason for me to dedicate a jam to this great person.      The black tomatoes jam will do wonders with fish as well as poultry, but also with goat cheese.

Raratouille jam Ratatouille
I was watching the "Ratatouille" DVD with my 10 years old nephew and what started as a joke found its place in a jar... Ratatouille is a recipe from Provence and as a jam is is almost the same recipe but "jammed", After having prepared an authentic ratatouille, with the veggies and garlic and olive oil, I added the sugar and cooked it for a few hours...The result was fantastic and very popular with anybody who dared to taste. This jam, allas, won't be great for breakfast, I think, but, OH YESSSS!!! with rice, an omelette, asian food.....

I read about a tomato,ginger & cardamome soup in an online israeli newspaper. I sais to myself that " i looks great as soup, why not as a jam?"And it worked! I got a very tasty result that I enjoyed on bread and butter and also with fish and sea-food, with rice, eggs etc....
