Provocation in Red (Plum & hot red pepper jam) Hot spiced plum jam
The truth is that what I first had in my had was an image, colours. I had no idea of what I was going to cook, nor of the possible result. BUT, I tasted it a few times while it was cooking, and this jam started looking like a promise. And It has kept its promised, I liked the result. Sweet-hot combination is known to us from asian cuisine. I hope my new jam will take its place in our cuisine too.

Delicate yet exotic jam. Will be great with many kinds of sausages, with 18-24 months old Gouda cheese and many other cheeses.

3 Apricots & Star anise jam

Star anise has a very strong flavour and aroma. With apricots these characteristics are intensified, though the apricot is still very present. Try this jam for breakfast, or on a biscuit, even on a fruit pie. Pork, veal or poultry will enjoy its company on your plate too.

Peach & Onion jam

confiture artisanale de pêches à l'oignon, préparée par Daniel Eilat, artisan confiturier. Le Roussel, 24480 Le Buisson de Cadouin Made with especially sweet variety of onions and with a very small proportion (10%) you still feel the onion's presence. Beside the regular bread and butter I'd try this jam with spicy foods, strong cheese, and , yes, again, fois gras.

Le Roussel, 2448-Le Buisson de Cadouin,Perigord, France to make a jam with caramelised fruit is a very delicate job. so easy to make a real mess out of it! you must be really careful not to burn the fruit and have to throw everything to the garbage. But when you are careful, and get the result you've expected, then you can celebrate... On bread or cake, on Ice cream, with all kind od desert. I have not tried this jam with meats or cheese. IF you do, please let me know.

6 Peach with rosemary & coriandre jam Confiture artisanale de pêche. Daniel Eilat artisan confiturier This jam really makes me proud. The rosemary and coriander  give the peach a great aroma and flavour.   I think it would go well with everything you try it with, but my all time favourite is just bread and butter....

Ah,peaches, beautiful fruit, wonderful texture, aroma and taste...Garlic? Yes!!!It comes to add and complete the story. If you will hesitate to give it a try on your toast in the morning, then try it with ham, sausage, pâté etc... for starters, or with strong goat cheese with good bread. And...don't worry, you can kiss the bride after having tried this jam( provided she has too ;-) )
