Unlike Whiskey, that loses its special flavour and aroma with cooking, Calvados, an alcohol made in Normandie from apples, keeps its distinct taste even when cooked for hours. . The cane sugar sweetens the apples and the calvados, but doesn't dominate. I loved it on bread and butter as well as on a "crepe". I think it will add to your adventure with a flambée fruit salad, a sherbet made with berries, or even as it is, a spoonful behind closed doors. |

There's a perfect match between the sweetness of the apple and the "stingy" flavour and aroma of the ginger. The combination makes it a good choice for breakfast on a slice of good bread or cake. It will also be fine with red meats, liver, veal and poultry. If you tray the apple & ginger jam with vanilla Ice cream you might have a good surprise too... |

This one was the jam that pushed me into the market. Every year, in October, they have here, in the area, "La semaine du goût" ( = the taste week) during which the chef of the "Vieux Logis" sits as the chairman of judges in the "jam competition. I have presented this jam (anonymously) and came out with the second prize. with that kind of recognition, I had the courage to start my "jam session". The pears & peppercorn jam is on in a series of jams that , like many others go with everything. But Try it with a good goat cheese or even a well done Camembert and be ready for a very pleasurable experience. |

Yes, I know, reading these words makes you feel funny. You're now making a face, thinking " good heavens! the guy's gone nuts!!!" But no. Pear & garlic go very well together in cooking as well as in a jam. you can taste both, separately, but the pear is dominant and the garlic comes as a surprise. A good surprise. Try it on a thick slice of bread with salted butter, or with ham, with veal or a lamb chop, and, of course, cheese, especially goat cheese that has a strong taste( what we call, in French, "Fromage de caractère", cheese with personality) | ||

| 10 | Queens' delight (Quince & thyme jam) |

This one is a "must taste"...Here in France, everybody knows the "pâte de coings" ( quince paste) and the "gelée de coings"(the quince jelly). I have made my quince jam thinking of the jam north african jews traditionally make to break the fast of Yom Kippur, but with the addition of thyme. Thyme adds not only a great delicate flavour but a great perfume. And the longer the jar is closed, the stronger become the aroma and flavour. That leaves you to decide on when to open the jar, and how strong you'll feel the thyme. Great for breakfast, on a thick slice of "pain de campagne", this jam will work miracles with a good "tome de chèvre". One client has also suggested to try this jam with Foie gras. | ||

About a week ago My daughter has told me that she saw a recipe for a jam that she was sure i would love. After arguing that i try not to work with recipes that aren't my own, she convinced me to "at least take a look". I reluctantly agreed and reached for the book and I woke up. YES!!! It was a dream. so, with my first coffee in the morning, i opened the book and looked for the recipe. I was not there. After having called my daughter and having told her the story, I proceeded to make this wonderful jam. As most people usually think jam-breakfast, this is the first thing to do. result: magic!wonderful! But try it with foie gras and you won't stop smiling for 10 ans a half days. You can also try it with grilled meats and then, proceed to deserts and cheese(any)...tell me what you think |
