Fig jam, another classic in our region. People love it but as no every granny has her fig tree, and figs are quite expensive to buy just for jam, I feel lucky as my own tree gives quite a lot of figs. With vanilla it is just great .

MMMMMMMMMMMMM .....I was daydreaming, and in my (day)dream I saw a mutton dish I've tasted at a "Nabatéin" restaurant in the south of Israel desert. The Nabateans were ancient traders, descendants of the Edomites. They trades perfumes & herbs and ruled the deserts between today's Jordan kingdom and Gazza. They have built Petra, the necropolis and many trade stations & towns on the roads between there and Gazza. ... That restaurant I am talking about claimed to be using old nabatéin recipes. True or not, food was delicious. And That mutton dish, with figs, walnuts wine and herbs from the desert, was divine, and gave me the idea for this jam

Figs, raisins and rum
fiog jam with rum. Made By Daniel EILAT, Le Roussel, Perigord,FRANCE The one's a real delicacy. Here I've improvised on the recipe of "figs jam "à l'Albigoise", a desert in its own right. I will put a smile on your face in the morning, and add a lot of character to any desert too 230gr. 5€00

Oranges & Irish Whiskey marmalade
Confiture d'oranges et whiskey irlandais
In cooking, the alcohol is lost, evaporated. The same happens to the whiskey flavour. But still, the irish whiskey (Jameson's ® my all time favourite) leaves something very delicate, very subtle that only Irish whiskey can leave.

onion Comfit by Daniel EILAT This real classic done the trational way to accompany everything: Foie gras, poultry, red meat or white meat. Not a real jam by nevertheless a delicacy. Many people have asked me for it and i had to admit i didn't make any. so one day I said to myself "why not"?
